For something light and refreshing, try one of the restaurant’s fresh salads, such as the roasted carrot avocado salad with grapefruit slices and pepitas, the beet and arugula salad with goat cheese and poached pear, or the petit greens salad with red grapes, Coachella dates, Pt. Reyes bleu cheese, and a red wine dressing.
Entrées at this upscale eatery include fanciful preparations of gourmet ingredients from all over the world. Indulge in succulent seared jumbo scallops with a crispy saffron polenta, Scottish salmon, Berkshire pork chop, Moscovy duck breast with a foie gras brulee and duck bacon, Australian barramundi paired with lobster potato and smoked salmon in a cabernet butter, Colorado lamb T-bone in a merlot reduction with mint sauce, papparedelle pasta with garlic prawns, rosemary chicken breast with parmesan crushed potato, and prime grilled New York steak with truffle fries. One note about Copley’s: the days change seasonally, with the restaurant remaining open daily from 5:30pm to close during October through mid-June and closed on Mondays from mid-June to July 1st and from September to October. The restaurant also closes for the summer from July 2nd to August 31st each year, so plan accordingly when you book your Palm Springs vacation rental!
